Pintrest Success - Chicken Spiedini

I love finding new recipes on Pintrest and boy was this one a winner winner chicken dinner :)

I am only cooking for my husband and myself and we are eatting healthy so I had to edit the recipe a little....

 2 chicken breasts cut into 1 inch pieces
1/2 cup olive oil
1/2 cup white wine
1/2 cup Parmesan cheese
1/2 cup bread crumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 teaspoon red pepper flakes
Sauce:
1/2 cup melted brummel (its like a yogurt butter?) Learn more about brummel here
1/2 cup lemon juice

Place the chicken, oil, wine and spices in a Ziploc bag.  Marinate for 1/2 and hour.. longer won't hurt if you have the time but who ever does right?

::drink wine::

Mix Parmesan cheese and bread crumbs together.  Roll the chicken in the bread crumb mixture.

 Put the chicken on a skewer and broil for 15 mins in a toaster oven.  Conventional oven works too but probably only for 10 mins.

While the chicken is in the toaster oven, melt the brummel and infuse the lemon juice.  Whisk briskly while slowly pouring the lemon juice in.  Pour the butter sauce over the chicken when you remove it from the toaster oven... also drink more wine.. :)


I paired my chicken with some quinoa and brown rice, a lettuce and tomato salad sans dressing and the left over Grand Traverse Semi Dry Riesling from cooking the chicken.

Verdict: Yum!  Hubby loved it to... we had plenty of left overs for tomorrow too!

I knew I wanted to tie in my soon to be husband's and mine's favorite foot ball team... how better then a garter!  For $30 I am got a toss and keepsake garter that are adorable!

They were shipped super fast too so if its last minute, its not to late!!!

Hair Trial

I will re-write this blog in more detail soon  buuuuut just in case you stumble upon it... DO NOT USE BRIDAL BEAUTY DETROIT!  They were 2 hours late on the wedding day because apparently they don't check traffic, lied about having jobs before clearly on the other side of Detroit and did a horrible job on my bridesmaids and mothers to the point they had to go to a different room and redo what was done.  They caused lots of tears... are delusional that they finished on time and did a good job and I do not recommend them.  I needed a refund too because they skipped to lash applications for my girls and 1/2 of my refund was a starbucks gift card... I am sorry but starbucks is not how I paid for my service and not how I expected my $ back.

I found BridalBeautyDetroit via The Knot and couldn't be happier!

They are going to send a team to my mother's house to do hair and make up for my girls, mother, mother in law and myself.... and hello affordable!

I miss London

Is it possible to feel "homesick" over some place that was never technically your "home"?

Lately I feel that way about London.  The universe keeps not quite getting the perfect situation to move there permanently.  It keeps going in this cycle, perfect for me but not the right time for future hubby so I get set in a path to success and then his perfect time comes up to conflict with everything I worked for... frustrating..

Custom Hand Made Wedding Invitations

As you may have guessed, a lot of my wedding is coming from local Michigan vendors.  It's something I believe strongly in and well the invitations speak from themselves in this example.

I found Custom Creations & Invitations on The Knot and one weekend that I happened to be in Detroit, my mother and I went over to Karen's studio to meet her and check out prices.  By the time we left Karen had designed my invitation and promised a date for my mother to return and review the proof.

The results were AMAZING!  I am not going to post my invitation in its entirety just yet because its would be really creepy to have random people showing up to my wedding but you can look at her website and wedding wire profile to see her work.  I've had people commenting on their RSVP cards how it is the most beautiful invitation they had ever seen.

The best part?  Karen was able to not only create exactly what I wanted but the price was amazing as well.  $5 per invite!  Karen and her team pour their hearts into these invitations and it shows.

She is located in Metro Detroit but will take orders from anywhere.. I HIGHLY recommend using her for your invitation needs!
